“Remontage” consists in pumping up the wine from the bottom of the vat in order to sprinkle the “cap” (grape skin and pips which rise to the surface). The process optimises the extraction of colour and tannins.

It is based principally on the quality of the soil, the altitude, the micro-climate, and the method of cultivation of the vine in each parcel. The parcels are classified in this way from A (the best score) to F.

GRAPE VARIETIES

Quinta do Noval is a blended wine using the noble grape varieties of Douro, the majority of which are Touriga Nacional supported by Touriga Franca and Tinto Cão.


WHERE THE GRAPES COME FROM
All grapes come from the Quinta do Noval vineyard. 


VINIFICATION
We use the “remontage” method for wine in stainless steel vats, with temperatures held at 26ºC. 


MATURING
All wine is matured in French oak casks for approximately 18 months.
